This is another easy and quickly prepared dish which is enjoyable to eat and offers a flavour which is rather different in a chicken dish. It is also one which can be prepared in advance and cooked quickly after a day's outing.
Serves 4
INGREDIENTS
500gr chicken fillets, skinned and cut into strips
Olive oil for cooking
Toasted sesame seeds
MARINADE:
4 TB virgin olive oil
2 TB soy sauce
1 TB plum sauce
1 tsp nam pla (fish sauce)
1 clove garlic, crushed
METHOD
Prepare chicken strips. Mix together marinade ingredients, add chicken and toss well to coat. Allow to marinate for at least several hours.
To cook, heat a little oil in a wok or pan, add the chicken strips (in batches, if necessary) cook through, tossing often to prevent sticking.
Turn onto a serving platter,sprinkle generously with sesame seeds (also chopped parsley, if desired). Serve with stir-fried vegetables.
Excellent with a Yarra Valley white wine of choice.
